Aam Kashundi Chingri (Mango Mustard Prawn)

Ingredients:

500g prawns, deveined and cleaned

1 large ripe mango, peeled and grated

3 tbsp mustard oil

1 tbsp black mustard seeds

1 tbsp yellow mustard seeds

2 green chilies, chopped

1 tsp turmeric powder

1 tsp red chili powder

Salt to taste


Instructions:

In a blender, grind the black and yellow mustard seeds with a little water to form a smooth paste.

Heat mustard oil in a pan over medium heat.

Add the mustard paste to the pan and cook for 2-3 minutes until it starts to change color.

Add chopped green chilies, turmeric powder, red chili powder, and salt to the pan. Mix well.

Add the grated mango to the pan and cook for another 2-3 minutes until the mango softens and the mixture thickens.

Add the prawns to the pan and mix well, ensuring that the prawns are coated with the mango-mustard mixture.

Cover the pan and let the prawns cook for 5-7 minutes, stirring occasionally, until the prawns are cooked through and the gravy thickens.

Garnish with fresh coriander leaves and serve hot with steamed rice.
